I’ll admit when I first looked at this recipe I didn’t think it would be a winner.

I was so wrong.

It’s AMAZING.

Great way to satisfy your sweet cravings without damaging your fat loss progress.

Plus, with ingredients like chia, flaxseeds and cacao it’s brimming with nutrition.

I’m getting all fizzy just thinking about it! :)

This recipe is from Sarah Wilson’s book, ‘I Quit Sugar’ which you can get on Amazon or any other book place for that matter.

Chia & Quinoa Parfait

Ingredients

1/2 cup (70g) cooked quinoa

3 tablespoons chia seeds

1 tablespoon flaxseeds (linseeds)

375ml almond milk or coconut milk

2 teaspoons of raw cacao powder

1/2 cup (125ml) full-fat unsweetened thick Greek-style yoghurt

1/2 cup (125ml) fruit coulis

Handful of frozen berries

Serves 2

Method

Mix the quinoa, chia seeds, flaxseeds, milk and cacao powder well, then put in the fridge for 1-2 hours.

To serve, layer with the yoghurt and coulis in a pretty glass and whack the berries on top.

Note: I don’t know if I cocked up the measurement with quinoa, but it seemed like I had a shit load of it leftover.

I ended up having this chia and quinoa parfait combo three days on the trot.

Which, of course, wasn’t a bad thing :)
